Chef David Woolums has worked with a variety of notable chefs, including: Tony Hanslits at Peters Restaurant and the Hilton at the Circle; Susan Goss at Something Different as Pastry Chef; and Matt O’Neil as executive chef of Walden Inn in Greencastle, IN. Chef Woolums joined the faculty at Ivy Tech State College to help implement the Baking and Pastry Arts degree to the Indianapolis region. He then left academia for an opportunity to expand his experience into small business ownership and opened A Pocket Full of Rye Bakery and Café in Lafayette, IN. A Pocket Full of Rye closed in September of 2007. Soon after that, he sold his other business, The Village Coffeehouse, in West Lafayette, IN. He then returned to what he calls his best contribution to the foodservice industry: teaching.
