CIAO RISTORANTE IS ITALIAN FOOD WITH THE ULTIMATE SICILIAN TWIST

Colin Wakeling earned his chops in Sullivan University’s culinary program and in the kitchens of a high-profile Louisville restaurant and a private club. But the chef had no experience with Italian food when owner Bridget Pizzonia dangled the opportunity of being the head honcho at Ciao Ristorante, 1201 Payne St.

“There’s been a lot of trial and error. I read about different Italian regions’ cooking in a great book, ‘La Cucina,’ and in magazines. After a couple months, it all started to flow as I began seeing what flies and what doesn’t. Also, Bridget and I brainstorm about classic Italian dishes and how we might be able to make them more modern,” Wakeling said.
